Handcrafted with love
The Beginning
Our journey began in Odessa, on the shores of the Black Sea. From childhood, Alexander loved ice cream — a dessert that combined natural flavour, quality, joy, and preserved nutrients naturally. As he grew up, it became clear that the ice cream on store shelves no longer matched those memories. This inspired the dream of creating real, artisanal ice cream — natural, high-quality, and crafted with care. The birth of our children strengthened his determination to make this dream a reality.
Our Process
Crafting our ice cream
In 2019, we began experimenting at home, learning the science of gelato and refining our craft. We later moved to a shared kitchen in a children's entertainment centre and then to our own small production space. Every ingredient was carefully chosen: Madagascar vanilla pods, single-origin chocolate, fresh fruits and berries, organic milk and cream.
We use traditional Italian gelato techniques, ensuring authentic texture, vibrant flavour, and natural preservation of nutrients. Our ice cream cakes quickly became a favourite — we were the first in our city to offer them. Clients told us that the cakes brought joy to children with gluten restrictions and to those who didn't enjoy standard cakes. After events, the cakes were always completely eaten, a light, delicious finish that never went to waste.
A New Chapter
Moving to Ireland
In 2022, after leaving Ukraine with our three young children, we received invitations to work in gelaterias across Europe. We chose Ireland, as English — our third language — allowed us to communicate and navigate a new environment.
Julia worked seasonally in a gelateria by the ocean, bringing her artisanal approach. While speed was often prioritised over craft in local practices, she remained committed to natural, handcrafted methods, developing from scratch sorbets with organic acai and pitaya — one of the first projects of its kind in Ireland. These recipes remain popular today for their authentic flavour and care.
Meanwhile, Alexander supported the family, but low pay and the impossibility of arranging childcare for three young children made it very challenging to combine work with family life.

Food Academy
Our permanent home
In September 2024, we began the Food Academy and completed it in February 2025. During this period, we had to leave our previous production space in Ballina, which we had been searching for over a year. Luckily, a suitable new space was found quickly with the support of the Local Enterprise Office and local food businesses in Castlerea. Throughout the Academy, preparing our products for retail was a very intensive process that required careful planning and countless hours of work — this effort also led to the creation of the Noble brand, reflecting the philosophy and care behind every product.
After completing the Food Academy, we were selected for Taste of Local, a section in SuperValu that supports local producers. Our ice cream is stocked in freezers alongside large commercial brands, giving people a unique opportunity to discover real, artisanal gelato — often for the very first time.

In May 2025, we made our first deliveries. Every scoop reflects our journey — from careful ingredient selection and recipe development to artisanal production. We warmly invite you to share this journey with us. Our goal is to show that artisanal ice cream is more than a dessert: it preserves natural flavour and nutrients, and inspires food enthusiasts and chefs seeking outstanding quality.
